My family loves chicken pies. It brings back so many memories of me in my Granny's kitchen while she's busy making chicken pies for the church's bazaars. Chicken pie is not only a dinner dish, we enjoy it at lunchtime as well. And sometimes if there are leftovers we'll have it for breakfast. We make big pies, medium ones, small ones and bite-size ones. The easiest is when I make it, I place the pies, unbaked on a serving tray, and place it in the freezer to freeze. The next day I'll remove it from the tray and put it all together in a ziplock bag and freeze it again. Then I always have pies ready-to-bake in my freezer. Not only is the pastry flaky but the pie mix is delicious. It is easy to prepare from the pie mix to the pastry and pie. Use my Chicken Pie Mix to fill the pies and enjoy with a good salad.
