Custard Cake

My granny loved custard. Anything from custard cake to custard slices to cold custard with jello on warm days and warm and thick custard after dinner winter time and anytime or anything or everything in between. School holidays she would bake custard cookies with a lemony icing in between the two cookies. For special occasions she would make custard slices. So what I want to say is: "Custard and I am related".


I haven't bake a custard cake since I arrived in Canada. At home I used to bake it on weekends, because it was my dad's favourite, just without the coconut on top. I baked it the other day and I forgot what a light, spongy-like, delicious and not-over-the-top-sweet cake it is. It's easy to prepare, quick to bake and delicious to eat.
