I do not know of anyone who don't like a Swiss Roll. Oh boy, that spongy soft-melt-in-your-mouth-bite with an apricot jam filling. My granny used to bake loads of them for her clients and for home we always had one in the freezer. Because, just as she rolled it the last time and filled it with her HomeMade Apricot Jam filling, we would devour the whole roll. So it was always wise to keep some in the freezer. She had different fillings she would use. HomeMade Caramel Treat with whipped cream, fresh fruit and whipped cream. For a chocolate Swiss Roll she would use a chocolate filling with strawberries and whipped cream. It is such a easy versatile cake that you can do or use it with any filling or any occasion.
We have this extremely delicious traditional dessert at home. Mom and Granny would only make it for special occasions or when special people came to visit. It was called a Trifle. They would line the bowl with slices of the Swiss Roll and built layer with the canned and fresh fruit, jello, jam pieces, Swiss Roll slices and custard. It was a colourful bowl. There were different variants of canned peaches from the garden and fresh fruits, jello in different flavours and colours, some sugared ginger pieces, and makataan (wild melon) jam pieces. It was so delicious. And for a special occasion, she would add a spoon of Old Brown Sherry in the custard.
