My family loves veggies and fruit. It can be served raw or be baked, steamed or cooked and they would eat it. My parents lived closed to us in South Africa and my kids grew up always being very close to my parents. My dad, mom and granny loved gardening. My mom had a beautiful, colourful and exquisite smelled rose garden. My dad had the backyard for himself and loved his veggie garden and fruit trees. Since my kids were still very small, they would 'work' with Oupa in his veggie garden. He had tomatoes, potatoes, peas and beans, cauliflowers and broccoli, butternuts and gem squash, brussel sprouts and spinach. Fig trees, 4 different peach trees, prickly pears, a prune tree and some grapes. They loved pulling the root veggies out of the ground or snapping the peas out of the skins. Oupa had the hosepipe close by for them to wash off the dirt. Or they would climb in the trees and pick their own fruit from the branches. The three of them would sit on the grass and eat the fresh fruit and veggies. Afterwards they would harvest enough for dinner. My mom made the most delicious stews using their veggies from the garden or fruit salads from the fruit trees.
Till today they still love veggies. Raw or steamed, baked or fried, doesn't matter how I prepare it, they love it. The Creamed Spinach recipe is easy to make and very versatile. You can use it in a filling for a spinach quiche or just serve after mixing all together or if you want to make a spinach bake casserole, drizzle bread crumbs, parmesan and cheddar cheese over and grill for 10 - 15 minutes. Serve!
